Beans with Pinzimonio


Fagioli al pinzimonio is a delicious Italian side dish. The beans are slowly cooked with garlic, cherry tomatoes, parsley, and bay leaves, and then seasoned with a pinzimonio dressing made with olive oil, lemon juice, chili powder, and salt.   • Soak the beans overnight.

  • Mix the pinzimonio vigorously with a fork.
  • Pour the pinzimonio over the cooled beans and let them marinate for about 10 minutes.
  • Finally, serve the beans with pinzimonio as a side dish, perhaps accompanied by some crostini.


Add grated cheese on top of the beans with pinzimonio for an extra flavor kick.
