  • Allow the gelato to soften slightly at room temperature, then transfer it to a semicircle mold or the mold of your choice, leveling it well. Place in the freezer for at least 15 minutes.
  • Meanwhile, blend the berries with two tablespoons of sugar and a glass of water, then strain the resulting mixture with a sieve.
  • Cut out a disc from the sponge cake the size of the base of the mold and soak it with the prepared berry sauce, making sure it soaks well.
  • Whip the egg whites to stiff peaks with the remaining sugar and a pinch of salt, using an electric whisk until you get a soft but firm meringue.
  • Preheat the oven to 250 degrees Celsius.
  • Place the sponge cake disc on a baking tray, place the gelato on top, and completely cover with the whipped meringue, creating a uniform layer.
  • Bake for about 3-4 minutes, just enough time to lightly brown the meringue without melting the gelato.
  • Serve the baked gelato bomb immediately, accompanied by the remaining berry sauce.

Notes

For an original twist to the recipe, add a final sprinkle of chopped pistachios on the meringue before baking to add crunchiness and a delightful contrast in both flavor and color.
