Recipe for Rabbit with Olives: Mediterranean Flavor
Rabbit with olives is a rich dish from the Italian culinary tradition, perfect for those who love the bold flavors of the Mediterranean. Prepared with browned rabbit pieces, onion, white wine, and enriched with black olives, it offers an intense flavor. Try it and delight in this classic, comforting recipe.
In a large skillet, heat a drizzle of olive oil and brown the rabbit pieces until they are golden brown on all sides.
Lightly dust the rabbit pieces with flour and add finely chopped onion, letting it all acquire a nice amber color.
Season with salt and pepper to taste, add a sprig of fresh rosemary for flavor, and deglaze with a glass of white wine.
Cover the skillet and continue cooking over low heat for about 40 minutes, occasionally turning the meat pieces for even cooking.
Halfway through cooking, incorporate pitted and chopped black olives to enrich the dish with their intense flavor.
Once the rabbit is tender and the sauce has reached a velvety consistency, remove the rosemary and arrange the meat pieces on a serving dish, drizzling with the aromatic sauce created during cooking.
Notes
For a creative and even more Mediterranean touch, add a few tablespoons of desalted capers to the sauce towards the end of cooking and garnish the dish with fresh basil leaves before serving.
