  • Begin by whisking the egg whites until stiff peaks form in a saucepan, adding three drops of lemon juice to stabilize the mixture.
  • Gently fold in the honey to the whipped egg whites, being careful not to deflate them.
  • Place the saucepan over very low heat and let the mixture cook for about 2 hours, stirring constantly with a wooden spoon to prevent it from sticking.
  • After two hours, add the shelled peanuts, grated orange zest, and a pinch of vanilla powder to the mixture.
  • Mix well until you achieve a homogeneous mixture and transfer everything to a baking tray lined with parchment paper.
  • Level the surface with the blade of a knife to reach a uniform thickness of about 2 cm.
  • Allow it to cool completely before cutting the nougat into small pieces.

Notes

For an original and crunchy twist, lightly toast the peanuts in a pan before using them in the recipe.
