  • Start by bringing a pot of salted water to a boil and blanch the snow peas for about 10 minutes. Drain them when they are still very al dente and cut a portion into small pieces.
  • Heat the 6 tablespoons of oil in a large pan, then add the previously scraped, washed, and dried new potatoes. Sauté them well, turning them often to ensure even cooking.
  • Reduce the heat, salt and pepper the potatoes to taste, and continue cooking for about 15 minutes or until they are tender but still crispy.
  • Add the chopped snow peas and shelled peanuts to the pan with the potatoes, let everything simmer for another minute, gently stirring.
  • Remove from the heat and serve the side dish piping hot.

Notes

To give an original touch to the recipe, try adding a pinch of smoked paprika along with the salt and pepper while cooking the new potatoes. This will give a slightly spicy and smoky flavor that pairs perfectly with the sweetness of the peanuts.
