  • In a large bowl, break the eggs and add a tablespoon of white flour and a pinch of salt. Beat vigorously until you get a homogeneous mixture.
  • Take a saucepan and melt a knob of butter over medium heat. Add the peeled garlic to flavor the butter.
  • When the butter begins to froth, remove the garlic and pour two generous tablespoons of strong wine vinegar into the pan, being careful of splashes.
  • Quickly mix the vinegar with the butter, then pour the egg and flour mixture into the pan.
  • Continue to stir constantly with a whisk or wooden spoon until the sauce thickens into a velvety cream without lumps.
