In a bowl, cream the whole eggs and egg yolks together.
Gradually add the powdered sugar, salt, 100 g of sugar, and vanilla sugar. Continue beating until a creamy mixture is obtained.
Sift the white flour mixed with wheat starch and vanilla baking powder over the cream. Mix everything together until a homogeneous dough is obtained.
Using two teaspoons, form small mounds of dough the size of a ladyfinger and place them on a baking sheet previously greased and lined with parchment paper. Make sure not to place them too close together.
Sprinkle the ladyfingers with the remaining sugar.
Bake the ladyfingers in the middle of a preheated oven at 200 degrees Celsius for about 8 minutes, or until golden brown.
Once cooked, allow the ladyfingers to cool completely before serving.
Notes
Add a dusting of cocoa powder on the ladyfingers before baking them for an extra touch of flavor.
