  • In a large pot, cook the pre-soaked dried beans with the two bay leaves and the onion cut into quarters, until the beans become tender.
  • Drain the beans, retaining the cooking broth, and remove the bay leaves and onion.
  • Pass the beans through a sieve to obtain a smooth and homogeneous puree.
  • In a pan, melt two tablespoons of margarine and incorporate the flour, stirring continuously to avoid lumps from forming.
  • Gradually add the bean broth to the flour mixture, continuing to stir until a thick cream is obtained.
  • Season with salt and pepper to taste and heat the puree over medium heat, stirring often.
  • In another pan, sauté the finely chopped red chili with a tablespoon of margarine, the crushed cloves, and the curry for a few minutes until they release their aromas.
  • Pour the spiced sauté into the bean puree and mix well to combine all the ingredients.
  • Serve the hot soup in bowls accompanied by crostini or fresh bread.

Notes

For a unique and exotic twist, add coconut milk at the end of cooking to make the soup even creamier and more indulgent. Garnish with freshly chopped coriander for a vibrant contrast in both color and flavor.
