  • Remove the rind from the cheese and dip it in cornmeal until it is completely coated with it.
  • In a frying pan, melt 30 g of butter. Clean the onion, cut it into rounds, and as soon as the butter is hot, add the onion rounds. Allow to wilt slowly, adjusting the salt and pepper.
  • In another skillet, melt the remaining butter and fry the Montasio cheese slices over high heat on both sides, being careful not to melt them.
  • Arrange the fried cheese slices on plates and top them with the wilted onions.

Notes

For an even tastier touch, you can add a pinch of herbs such as thyme or rosemary to the cornmeal before tossing the cheese in it. This will impart a unique aroma to your fried cheese. In addition, for a lighter version, you can opt to bake the cheese in the oven instead of frying it, while still maintaining a crispy exterior thanks to the breadcrumbs in the cornmeal.
