Wash the apples, remove the seeds and dice them without peeling.
Cut the celery into small cubes.
Macerate celery and apples in lemon juice for 1 hour.
Drain celery and apples, and season with just enough pepper and mayonnaise.
Sprinkle with finely chopped hazelnuts.
Store in the refrigerator before serving.
Notes
For an even lighter variation, replace the mayonnaise with low-fat Greek yogurt. This not only reduces calories, but also adds a pleasant freshness to the dish.
