  • Wash the celery hearts thoroughly.
  • Wash the apples, remove the seeds and dice them without peeling.
  • Cut the celery into small cubes.
  • Macerate celery and apples in lemon juice for 1 hour.
  • Drain celery and apples, and season with just enough pepper and mayonnaise.
  • Sprinkle with finely chopped hazelnuts.
  • Store in the refrigerator before serving.

Notes

For an even lighter variation, replace the mayonnaise with low-fat Greek yogurt. This not only reduces calories, but also adds a pleasant freshness to the dish.
