  • Cook mushrooms with half the butter, garlic, salt and pepper.
  • Prepare a béchamel sauce with the remaining butter, flour and milk. Season with salt, add the egg yolk, stirring quickly to prevent it from cooking, and soften with the tablespoon of cream.
  • Combine the mushrooms with the béchamel sauce.
  • Toast the pancarrè, spread the mixture over the canapés, and serve hot.

Notes

For an even tastier variation, you can add a pinch of nutmeg to the béchamel sauce or sprinkle the canapés with grated cheese before serving. If you prefer a lighter version, replace the butter with extra virgin olive oil and the whole milk with part-skim milk.
