  • Carefully clean the chicken pieces, sprinkle them with salt and plenty of pepper and place them in a bowl.
  • Combine the onion cut into rings, crushed garlic, olives, sage, rosemary, bay leaf, chilies halved and seeded and ribbed, juice of half a lemon, and oil. Turn the chicken pieces in the bowl several times so they soak in the seasoning, cover the container with a sheet of plastic wrap, and let marinate for half a day in a cool place.
  • After the specified time has elapsed, drain the chicken quarters from the marinade and place them on the hot grill on the side with the skin, let them cook 20 minutes on each side and take care to brush them with the marinade from time to time.
  • Serve the chicken piping hot.

Notes

For an even more aromatic variation, you can also add some fresh or dried thyme to the marinade. This will add an extra layer of flavor to your grilled chicken. Also, for those who like more intense flavors, an addition of a couple of tablespoons of Worcestershire sauce in the marinade can make all the difference. Remember to let the chicken marinate for at least 12 hours to make sure the flavors blend well.
