Dip the sole in beaten egg with salt and 30 g melted butter and then in bread crumbs.
Fry the sole in the remaining butter.
Sprinkle sole with plenty of chopped parsley.
Drizzle sole with lemon juice and serve.
Notes
For an even lighter and healthier variation, you can bake the sole in the oven at 180°C for about 15 minutes instead of frying them. This method of cooking will greatly reduce the fat content of the dish.
