Use already aged goat cheese, grate it and place it in a bowl.
Add enough curdled milk to form an amalgam.
Combine a few drops of oil and a few drops of grappa, minced garlic, pepper and a handful of rosemary, thyme and marjoram.
Stir with a wooden spoon and place in an earthenware container.
Notes
For an even spicier touch, you can add a small amount of chopped chili to the recipe. This cheese is ideal to accompany crusty bread or as a base for a spicy pasta sauce.
