You release the fruit (dates, plums) from the rinds and pits.
Pound the previously blanched and peeled almonds to a smooth paste.
Powdered sugar is added in the proportion of half the weight of the almonds.
You color the mixture with a little vegetable dye.
Using the resulting batter, fill the various fruits.
Notes
For an even yummier variation, you can dip the already filled bonbons in melted chocolate and let them cool on baking paper. This will add an extra touch of crunch and sweetness.
