  • Wash and dry well 1000 g of lamb shoulder cut into small pieces.
  • Lightly flour and cook in a high-sided pan in 1/2 cup olive oil.
  • Season with salt and pepper and cook over high heat, stirring often.
  • Wet with a glass of wine halfway through cooking, let it fade, and complete cooking, with the lid on a gentle flame.
  • At the last moment, combine 6 cloves of minced garlic, a handful of chopped almonds, 1/2 teaspoon saffron and 1/2 teaspoon cumin powder.
  • Mix the flavors well and serve with fried bread croutons.

Notes

For an even more flavorful version, you can add a bunch of herbs such as rosemary, thyme and bay leaves to the recipe while cooking. This will further enrich the taste of the stew. Also, for a flawless presentation, garnish the dish with a few leaves of fresh parsley.
