Scald the almonds in boiling water, peel and grind them to a fine powder.
In a bowl, beat the egg yolks with the sugar then very slowly add, stirring carefully so that no lumps form, the flour, chocolate and almonds.
Try to form in this way a fairly firm mixture with which to make slightly flattened balls.
Arrange them then, in a buttered cake pan and bake for about 20 minutes at moderate heat.
When cooked, dust the puffs with powdered sugar.
Notes
For an even more mouthwatering variation, you can dip half of the cream puffs in melted dark chocolate before serving. This will add an extra touch of elegance and flavor.
