Quick & Easy Bell Pepper Pasta: A Light Delight

  • Sauté the onion and garlic.
  • Add the chopped bell bell pepper and sauté it a little.
  • Add the chopped raw cherry tomatoes. Season with salt and let cook for about 20 minutes.
  • Add capers, olives or parsley to taste.
  • Great just before serving a drizzle of raw oil.

Notes

For an extra touch of freshness, add a handful of fresh basil leaves just before serving. This will not only enrich the flavor, but also add a nice color to the dish. For a more substantial version, you can also add cubes of buffalo mozzarella or crumbled feta cheese.
