Brown chopped onion, chopped and seeded tomatoes and peel, rosemary, sage, salt and pepper in oil.
Cook on high heat for 10'.
Add the rabbit, let it season, douse with wine, let it evaporate, adjust the salt, and cook for about 30'.
Notes
For an even more aromatic touch, you can add a pinch of thyme or marjoram while cooking. If you prefer a lighter version, you can replace the olive oil with vegetable broth.
