Aromatic Rabbit: Easy Recipe

Instructions

  • Sauté the rabbit, spraying it with vinegar.
  • Brown chopped onion, chopped and seeded tomatoes and peel, rosemary, sage, salt and pepper in oil.
  • Cook on high heat for 10'.
  • Add the rabbit, let it season, douse with wine, let it evaporate, adjust the salt, and cook for about 30'.

Notes

For an even more aromatic touch, you can add a pinch of thyme or marjoram while cooking. If you prefer a lighter version, you can replace the olive oil with vegetable broth.
